Experience the exceptional Saint-Chinian Château Gilbert & Gaillard Blanc 2021, the hallmark white wine of the château. Its perfect balance of roundness, vibrant fruit flavors, and refreshing finish promises to elevate any occasion. Grapes: Vermentino 50%, Grenache Blanc 50%. Certified organic since 2021. Alcohol is 14% of the volume.
Tasting notes: The wine is brilliant pale yellow with faint golden highlights. On the nose, it displays white flower notes, grapefruit, and tropical fruit.
The palate is a fusion of tension and roundness and delivers great balance, subtly honed by barrel ageing.
This white wine works equally well as an aperitif or with food.
When it comes to food pairings, both white fish and poultry are excellent choices. White fish, such as cod or halibut, complement the mild flavors and tender texture of poultry, making them a harmonious match in various dishes. Together, they can create a balanced meal, perfect for light fare or elegant dining. Use fresh herbs, citrus, or light sauces to enhance their flavors and elevate the dining experience.
Location: In the South of the Saint-Chinian appellation, the vines surrounding the chateau are in the midst of a 3,000-hectare Natura 2000 national park.
Climate: Mediterranean, with a cooling northerly wind.
2021 Weather conditions: The campaign began with a dry and rather cool winter, then in the last week of March, the temperature rose to record levels. These temperatures favored a rather early vegetation.During the night of 7 to 8 April, a violent frost episode (up to -7° locally) caused significant damage to the Syrahs, fortunately limited to a few plots at Château Gilbert & Gaillard.
The following spring and summer remained cool, below seasonal averages, punctuated in July and August by regular storms. The château largely escaped the attacks of oidium and hail that hit the Languedoc vineyards and was in very good health at the beginning of September. Thus, It was possible to wait calmly for the ripening and start the harvest at the optimum time.
Soils: Silt-clay-sand plateau with Eocene limestone gravel, located at an average of 150 meters above sea level. Average vine age: 30 years old.
Viticulture: Farmed organically since 2015.
Yields: 30 hectolitres/ ha (Maximum appellation yield: 45 hectolitres/ha).
Winemaking:
Vermentino: Whole clusters go direct-to-press. The juice is cold stabilized for 5 days at 7°C with the lees put back into suspension once a day, maximizing extraction of aromatic precursors.
Then, the temperature is returned to 16°C to kick off alcoholic fermentation.
Grenache blanc: Night picking by hand, whole clusters are taken direct-to-press. The must temperature is 16°C.
Ageing: The Grenache Blanc spends 6 months in barrels.
