Winemaking: The grapes are destemmed and sorted by hand. Vatting lasts around three weeks. The wines are worked late at the start of fermentation to accentuate their freshness and length in the mouth. Daily juice tastings dictate post-fermentation maceration. Ageing: After racking, the juice is aged 100% in new heated barrels for two consecutive years.
