🍇 Vinification & Aging
Each grape variety is vinified separately and fully destemmed. Fermentation is done with selected yeasts in temperature-controlled stainless steel tanks (~20°C), followed by an extended six-week maceration to extract deep color, structure, and aroma. The final blend is aged for 11 months in new French oak barrels, delivering polish and depth.
