100% Chasselas
A rare expression of Pouilly-sur-Loire, this 100% Chasselas cuvée comes from the historic Baudin family vineyards in the hamlet of Les Loges, whose winemaking roots in the region date back to 1685, where tradition and terroir are deeply rooted.

The estate has produced wine in Pouilly-Fumé and Pouilly-sur-Loire since the 17th century. Guy Baudin modernized the domaine in 1969, and today his sons, Lilian and Ivan, oversee all aspects of production, from the vineyard to the cellar. Much of the work is done by hand, with minimal intervention.
 
Tasting:
Bright and delicate, the 2025 vintage offers crisp freshness with subtle aromas of white flowers, orchard fruits, and a gentle mineral edge. The palate is light yet structured, with a clean, refreshing finish that highlights the understated elegance of the Chasselas grape.
A true appellation classic—refined, easy-drinking, and increasingly rare.

With a naturally low alcohol level (11.5%), it stays light, balanced, and perfectly suited to delicate dishes.

Vinification:
Hand-harvested grapes. Gentle pneumatic pressing followed by cold settling. Fermentation with natural yeasts in temperature-controlled stainless steel. Aged on lees without racking to build texture and complexity, with minimal or no oak. Unfiltered; a small amount of sediment may be present.
Bottled from the spring following harvest. Best enjoyed within 2–3 years.
