Tete de Cuvee – Chateau La Grolet Bordeaux Cotes de Bourg
The Tete de Cuvee is the signature bottling from Château La Grolet, a wine that truly embodies the estate's heritage and meticulous craftsmanship. Sourced from the winery's oldest vines, with an average age of 55 years, this biodynamic Bordeaux is a masterful blend of 85% Merlot, 10% Malbec, and a hint of 5% Cabernet Sauvignon.
Alcohol: 13.5% ABV | Drinking window: 2025–2035
To truly experience its full character, we recommend decanting for at least one hour before serving to bring out this wine's full potential. The optimal drinking temperature is 18 degrees.
The winemaking process is as thoughtful as the viticulture. A low yield of just 25 hl/ha ensures concentrated fruit. Fermentation occurs with indigenous yeasts, followed by a two-week post-fermentation maceration to extract deep color and structure. The wine is then matured for one year in new barrels, with only the finest barrels being selected for the final blend. Bottled on a "fruit day" according to the biodynamic calendar, this wine is a pure expression of its terroir.
A minimal total SO₂ of 40 mg/L and a vegan certification further underscore the winery's commitment to natural winemaking.
Since 2000, we've proudly been certified organic and biodynamic Demeter, reflecting our ongoing commitment to quality and sustainability.

This wine's concentrated and aromatic profile, along with its rich, fleshy texture, makes it a perfect choice for special occasions and fine dining.
Food Pairings: A Global Gastronomy Guide 🍷
This versatile wine pairs beautifully with a range of dishes, from classic French cuisine to international flavors. Its robust structure and fruit-forward character complement hearty, rich foods.
International Pairings 🌍
Japanese Cuisine: This wine's depth works wonderfully with umami-rich and savory Japanese dishes. Consider pairing it with sukiyaki, where the thinly sliced beef and sweet-savory broth harmonize with the wine's fruit and spice notes. It also complements yakitori (grilled chicken skewers), especially those with a rich tare (soy-based) sauce.
Italian Cuisine: The wine's ripe fruit and hint of spice are a perfect match for rich Italian fare. Try it with a braised short rib ragù or a porcini mushroom risotto, where the earthy flavors of the mushrooms echo the wine's own complexity.
American Cuisine: Its bold profile stands up well to classic American dishes. A slow-cooked beef brisket with a rich barbecue sauce or a classic steak au poivre (steak with a pepper sauce) would be an excellent pairing, as the peppery spice in the dish highlights the wine’s subtle spice notes.
Traditional French Pairings
Capon: The traditional pairing with capon, a tender and flavorful poultry dish, is a classic for a reason. The wine's structure and elegance enhance the delicate richness of the meat.
Game Dishes: This wine pairs perfectly with rich, savory game dishes, such as venison or wild boar. The gamey flavors are balanced by the wine's fruit and tobacco notes, creating a complex and satisfying pairing.
