The grapes were fully destemmed before undergoing several punch-downs in a concrete tank. The wine was then traditionally fermented in vats for three weeks at a controlled temperature of 28-30°C. Malolactic fermentation was carried out in vats while the wine was left on its lees. Maturation took place 18 months in oak barrels, and 11,890 bottles were produced.
